Gourmet Rice Dinner
1 Lb bulk sausage(mild or hot),browned(drained,optional)
1 medium green bell pepper,chopped
1 medium onion,chopped
1 box of Uncle Ben's wild rice mix(faster cooking works too)
2 cans of Cream of Chicken and Mushroom Soup
1 small jar of pimentos
1 small can of sliced mushrooms(optional)
1 full bag of finely shredded cheese(we use the 2 cup bag. yes the entire bag)
Start by browning the bulk sausage in large stew pot, drain if desired (we never do). Chop green bell pepper into nice bite size bits, do the same to the onion. Add to cooked sausage and cook for another 5 minutes or until onion and green bell pepper are tender. Add rice and seasoning packet, cans of soup, pimetos, sliced mushrooms(optional), and entire bag of cheese. Add about 1/2 cup of water at first, and if contents still don't look soupy enough then add about 1/4 - 1/2 cup of more water. Stir, cover, and stir occassionally. Cook on Medium-Low for 30 minutes, stir to make sure it's not sticking to the bottom of the pan. Once fully cooked, serve with tortilla chips, or alone. Add extra cheese if desired! Perfect for cold wintery days, or whenever you want some comfort food!
Note: This is to be thicker than stew but loose enough to be eaten with a spoon. And when using wild rice judge doneness by the wild rice. Add more water if the consitency is too thick.
Enjoy and let me know what you think.

Re: Artery Clogging Comfort Food
Tue, February 22, 2005 - 9:46 PMOne of my favorite artery-clogging comfort foods has to be bee hoon, AKA Singapore-style stir fried rice vermicelli noodles. I've found few places that know how to do it right here in the US, as they often use the wrong oils, and often not enough.
I say screw it... some dishes are just bad for you (when consumed in mass quantities) and that's all there is to it. I'd rather reduce the frequency with which I eat those heart attack helpers than reduce the flavor and eat them more often. (what's the fun in that then?)
Sorry, no recipe to offer. I mostly cook healthy things m'self. But Heaven help me, I do love me some greasy noodles every now and then. -

Mon, February 28, 2005 - 11:43 PMHere, here! I decided a little while back to live l;ife to the fullest and eat what it is that I want, when I want. The one thing is that I choose to do so in moderation.
I love In and Out Burger, Krispy Creme Donuts, Grilled Cheese with Bacon among other things but I do enjoy these things only as special treats and not every day or more than once a week. -

Re: Artery Clogging Comfort Food
Tue, March 1, 2005 - 12:07 AMI can only agree with the credo of eating tasty things in moderation, rather than try to be satisfied with 'lite' , diet ,low-carb & on and on....they rarely, if ever, TASTE good and many 'diet' products contain things that are just plain BAD for you, such as articial sweeteners .
So sometimes I will happily indulge in pasta with a creamy sauce, fine cheeses or even a blowout from the chippie. My boyfriend has a saying that seems appropriate here "I'll be awfully pissed off if I die completely healthy".

Wed, March 2, 2005 - 11:41 PMThe closest I can think of to that is brunch at Foreign Cinema. The Slow-cooked brown sugar smoked bacon there is a thing of beauty.

Re: Artery Clogging Comfort Food
Thu, March 3, 2005 - 11:54 PMIt is possible to get that combination, if you don't mind a somewhat pricey for what it is breakfast, at the Hyatt fishermans' wharf, as they have a krispy creme counter in the sports grill restaurant. Whilst the donuts aren't hot, as they are from an actual krispy kreme outlet, I was happy to have hash browns and donuts for a fat and carb binge. The boyfriend had a full breakfast with a garnish of 3 donuts!
